Dark Chocolate

I have neglected to mention dark chocolate. I didn't put it in the blog description, "coffee, coffee shops, wireless..." or the first post or any post since the first post.

This is a regrettable, unfortunate omission. I realize the pain that I have caused to my readers, their families and friends, to the general public and most regrettably, to my proud country The United State of America.

I can only offer my deepest, most heartfelt apologies and promise that In the future I will strive to do better. I ask for your forgiveness and understanding. I am working with a minister, a rabbi and a priest. The minister, the rabbi and the priest walked into a bar. The minister took the first sip, and said... Oh, wait, sorry. I can only say that with time and understanding I hope to overcome this episode and become a better man.

But what do YOU think about dark chocolate? What's the best? Scharffen Berger? Donnelly Chocolates? Do you buy it at Trader Joes?

The little chocolate fish in Phish Phood ice cream are the best.

Try this from Trader Joe's: the "varietal chocolates" from Chocovic. There are three - Ocumare, Guaranda, and one I haven't had. Ocumare with its taste of wood is my fave. (I must've been a termite in a previous life, since I also like whiskey and oaky chardonnays.) The Valrhona 71% is good, too.

The one you haven't tried is Criollo, and it's the best one. Ocumare is good too.

Scharffen Berger 87% may be my favorite, but in my neck of the woods it's a lot easier to get a hold of El Rey chocolate, they have a bunch of different types ranging in cocoa content from 50% to 74%.

The best bar I have had is Cluizel's Hacienda 'Los Ancones', and I say this as someone who lives only a mile from the Scharffen Berger factory.

An interesting bar is the modern take on chocolatl by Dagoba.

Actually, Ocumare is criollo. The name I was groping for is Guyave. More info here.

Haven't titrated my limit of cocoa content, but I'd only use 87% for shaving onto cappuccino or baked goods.
